(written down by my sister, Sharon, who is an excellent cook herself)
Ingredients:
- 2 pounds lean ground beef
- 2 cups chicken broth
- 2-3 tsp. chili powder
- 2 tsp. paprika
- 2 tsp. cumin
- ½ tsp. turmeric
- 3-4 tsp. kosher salt, or more to taste
- 1/8 cup ketchup
- 1/3 cup chili sauce (Heinz)
- 2 tbs. brown sugar
- 1 large can crushed tomatoes
- 4 tbs. tomato paste or more as needed
- 4 large cloves garlic
- 1 white or yellow onion (the kind with brown paper skin), finely chopped
- ¼ cup Worcestershire sauce
Directions:
- Brown the ground beef in oil and chop with the spatula until finely separated. (Tip A few teaspoons of water seems to magically let the meat break apart and is much easier to get that fine texture needed for the chili sauce.)
- Add the onion and then the garlic to brown or soften.
- Add spices and cook for 1 minute.
- Add everything else and simmer for 1 hour.
- Add broth as needed
Janet’s notes:
- Use a good quality hot dog and pan fry or grill until sizzling on all sides. (I love Hebrew National brand)
- If you want an authentic West Virginia slaw dog, use only the split-top English-sided buns and grill them on both sides in butter until golden brown. A New England-style bun (the kind they use for lobster rolls) works nicely. I order mine off of Amazon.
- Tuck the hot dog in your beautifully grilled bun, top with yellow mustard, diced onions, the hot dog chili sauce, and some cool, creamy cole slaw.
- Play Country Roads, Take Me Home
- Have lots of napkins ready – this big boy is messy!
- Enjoy!
